America’s love affair with ethnic foods extends from restaurants and food chains to supermarkets and family freezers. Behind the scenes, experts from Linde LLC are helping processors satisfy growing demands and changing tastes.

Linde, one of the leading gases and engineering company in the world, offers solutions that typically involve the efficient use of carbon dioxide (CO2) or nitrogen (N2) in cryogenic freezers, in chilling systems and gas packaging processes. (See chart with some actual solutions for processors of ethnic foods.)

Producers of processed and frozen ethnic foods often need to scale quickly
-- because of expanded distribution or the success of a product.

“Processors of ethnic foods tell us they want to boost productivity, manage operating costs, and maintain quality and food safety,” says Mark DiMaggio, head of food and beverage, Linde LLC. “With Linde proprietary technology and know-how, we can help meet those needs, often all at once, and even in a limited space.”

For example, the patented Linde impingement freezer can typically freeze up to five times more product than alternative technologies in the same linear space. And the patented rolling-wave CRYOLINE® CW (CRYOWAVE®) IQF freezer can eliminate the headaches of CO2 flighted freezers and boost quality and productivity.

For production chilling, a host of frozen ethnic foods such as burritos use ground meat or poultry products in their recipes. The advanced ACCU-CHILL® chilling system can rapidly equilibrate even wet poultry mixes with an injection of liquid N2 or CO2 from the bottom of a mixer/blender. The Linde bottom-injection (BI) system is far more efficient than chilling from the top of a mixer with water ice, dry ice pellets, or CO2 snow.

Beyond solutions for freezing and chilling, Linde also provides food-grade gases for modified-atmosphere packaging (MAP) systems that can dramatically extend the shelf life of chilled meat and poultry products, prepared foods, baked goods and snack food items.

The Linde food team performs in-plant assessments, conducts trial production runs at our Technology Center, and works with processors to develop optimal process solutions. For more information, visit: www.lindefood.com, or call: 800-755-9277.

Linde LLC supports the Global Food Safety Initiative (GFSI) and the advancement of food safety. Linde has a Food Safety Management System in place for all bulk carbon dioxide (CO2) plants and air separation facilities supplying the food & beverage industry in North America. In June 2012, Linde became the first supplier to certify all of its CO2 plants to a benchmarked GFSI scheme, FSSC 22000 (Food Safety System Certification).
